I do think something has been lost a bit here in the transition. There's a reason most people say to read books, watch movies, play games, in release order rather then chronological timeline order. Prequels are inherently meant to be read after whatever it is a prequel to. You have more context, more detail, and can pick up on much more that way.

I don't know much about the Game of Thrones comics, but the case for comics in general is that a certain amount of issues from the comic series are put into a "graphic novel"/"trade paperback". Just start with the very first published novel entitled quite literally "A Game of Thrones" Show There are now 2,shows, the original "Game of Thrones"(8 seasons) and a Prequel called "House of the Dragon"(1 season). I don't think A Dance With Dragons has a cool old cover because its so new! In A Clash of Kings we see Stannis and Melisandre, possibly Davos bowing in front of him, and the white raven signalling the end of Summer. A Storm of Swords we see Hoster Tully's funeral, with Catelyn, Edmure and Robb in the background.
Are the books not in chronological order all ready? Well yes, but in Deaths End Crisis Era 1-4 of Cheng Xin happen congruently with TDF Year 3, Crisis era. So essentially what I started doing in the audiobooks is this. I'm not even talking about reading the Byzantine story, I'm gonna read that chapter right after the soap bubble experiment.
What worrys me is that Asha has left the iron islands in defiance of her father. In the books this only occured after Euron is named king. The whole greyjoy plot with Euron and Victarion no longer happens with Yara/Asha involved. All of the greyjoy plotline is thrown out of order. 3.
GOT is not overrated at all. It is one of the greatest television series ever and has great acting, storytelling despite the later seasons, directing, themes, visuals and symbolism. S5 shouldn't have deviated from the book. It was supposed to adapt A Feast For Crows (4th book) and if it didn't, AFFC would've need 2 seasons just like A Storm Of
1.A Storm of Swords. Jon's conflict and inner struggle while traveling with the Wildlings. His story from start to finish is some of the best and most satisfying in the series, especially the ending of his election as Lord Commander. Catelyn and Robb's tragic ending.
Honestly, start reading the main books 1-5 (A Game of Thrones, A Clash of Kings, A Storm of Swords, A Feast for Crows, A Dance with Dragons). If you want to do another read-through, I highly suggest incorporating the novellas as well.
